Dora Capin Recipes

4 cups navy beans  
5 strips short rib  
4 sliced onions  
1 whole head of garlic peeled 

Put beans into a pot, cover with water, bring to a boil and 
cook until almost ender; add short ribs that have been boiled. 
Simmer for about another 20 minutes. Saute onions in 
chicken fat. When beans are almost done add the beans 
and meat to a roaster with onions and garlic and a little 
liquid. Bake 300 for a couple of hours.

Prune and Sweet Potato Tizmas

10 sweet potatos (peel; cut into three parts) 
  5 pounds large prunes 
10 pounds short ribs 

Put short ribs into a pot and just cover with water. 
Bring to a boil and skim. Cook until almost tender. 

3 cups brown sugar 
4 sliced lemons 

When short ribs are almost tender put them into a roaster 
with prunes, lemons, and brown sugar. Add 4 cups of the 
beef liquid. Cover and bake at 275 for 1 1/2 hours. Uncover 
roaster and add chunks of sweet potato between meat and 
prunes. Bake for another 1 1/2 hours.
