| Prune and Sweet Potato Tizmas
10 sweet potatos (peel; cut into three parts)
5 pounds large prunes
10 pounds short ribs
Put short ribs into a pot and just cover with water.
Bring to a boil and skim. Cook until almost tender.
3 cups brown sugar 4 sliced lemons
When short ribs are almost tender put them into a roaster
with prunes, lemons, and brown sugar. Add 4 cups of the
beef liquid. Cover and bake at 275 for 1 1/2 hours. Uncover 
roaster and add chunks of sweet potato between meat and
prunes. Bake for another 1 1/2 hours. |
